    Okay, take a deep breath

    through your nose.

    It's your sense of smell

    and it's breathtakingly powerful.

    As an adult, you can distinguish
  • 0:22 - 0:24
    about 10,000 different smells.
  • 0:24 - 0:26
    Here's how your nose does it.
  • 0:26 - 0:27
    Smell starts when you sniff molecules
  • 0:27 - 0:29
    from the air into your nostrils.
  • 0:29 - 0:31
    95% of your nasal cavitity
  • 0:31 - 0:33
    is used just to filter that air
  • 0:33 - 0:34
    before it hits your lungs.
  • 0:34 - 0:35
    But at the very back of your nose
  • 0:35 - 0:38
    is a region called the olfactory epithelium,
  • 0:38 - 0:39
    a little patch of skin
  • 0:39 - 0:41
    that's key to everything you smell.
  • 0:41 - 0:42
    The olfactory epithelium has a layer
  • 0:42 - 0:44
    of olfactory receptor cells,
  • 0:44 - 0:46
    special neurons that sense smells,
  • 0:46 - 0:48
    like the taste buds of your nose.
  • 0:48 - 0:50
    When odor molecules hit the back of your nose,
  • 0:50 - 0:51
    they get stuck in a layer of mucus
  • 0:51 - 0:53
    covering the olfactory epithelium.
  • 0:53 - 0:54
    As they dissolve,
  • 0:54 - 0:56
    they bind to the olfactory receptor cells,
  • 0:56 - 0:57
    which fire and send signals
  • 0:57 - 0:59
    through the olfactory tract
  • 0:59 - 1:00
    up to your brain.
  • 1:00 - 1:01
    As a side note,
  • 1:01 - 1:02
    you can tell a lot
  • 1:02 - 1:03
    about how good an animal's sense of smell is
  • 1:03 - 1:05
    by the size of its olfactory epithelium.
  • 1:05 - 1:07
    A dog's olfactory epithelium
  • 1:07 - 1:08
    is 20 times bigger
  • 1:08 - 1:10
    than your puny human one.
  • 1:10 - 1:11
    But there's still a lot we don't know
  • 1:11 - 1:12
    about this little patch of cells, too.
  • 1:12 - 1:15
    For example, olfactory epithelium is pigmented
  • 1:15 - 1:18
    and scientists don't really know why.
  • 1:18 - 1:19
    But how do you actually tell the difference
  • 1:19 - 1:20
    between smells?
  • 1:20 - 1:22
    It turns out that your brain has
  • 1:22 - 1:25
    40 million different olfactory receptor neurons,
  • 1:25 - 1:30
    so odor A might trigger neurons 3, 427, and 988,
  • 1:30 - 1:36
    and odor B might trigger neurons 8, 76, and 2,496,678.
  • 1:36 - 1:37
    All of these different combinations
  • 1:37 - 1:40
    let you detect a staggeringly broad array of smells.
  • 1:40 - 1:42
    Plus, your olfactory neurons are always fresh
  • 1:42 - 1:43
    and ready for action.
  • 1:43 - 1:45
    They are the only neuron in the body
  • 1:45 - 1:46
    that gets replaced regularly,
  • 1:46 - 1:48
    every four to eight weeks.
  • 1:48 - 1:49
    Once those neurons are triggered,
  • 1:49 - 1:50
    the signal travels through a bundle
  • 1:50 - 1:51
    called the olfactory tract
  • 1:51 - 1:53
    to destinations all over your brain,
  • 1:53 - 1:54
    making stops at the amygoala,
  • 1:54 - 1:55
    the thalamus,
  • 1:55 - 1:56
    and the neocortex.
  • 1:56 - 1:57
    This is different
  • 1:57 - 1:58
    from how sight and sound are processed.
  • 1:58 - 2:00
    Each of those signals goes first
  • 2:00 - 2:01
    to a relay center
  • 2:01 - 2:03
    in the middle of the cerebral hemisphere
  • 2:03 - 2:05
    and then out to other regions of the brain.
  • 2:05 - 2:07
    But smell, because it evolved
  • 2:07 - 2:08
    before most of your other senses,
  • 2:08 - 2:09
    takes a direct route
  • 2:09 - 2:11
    to these different regions of the brain,
  • 2:11 - 2:13
    where it can trigger your fight-or-flight response,
  • 2:13 - 2:14
    help you recall memories,
  • 2:14 - 2:16
    or make your mouth water.
  • 2:16 - 2:17
    But even though we've all got
  • 2:17 - 2:18
    the same physiological set-up,
  • 2:18 - 2:20
    two nostrils and millions of olfactory neurons,
  • 2:20 - 2:23
    not everybody smells the same things.
  • 2:23 - 2:25
    One of the most famous examples of this
  • 2:25 - 2:28
    is the ability to smell so-called "asparagus pee".
  • 2:28 - 2:29
    For about a quarter of the population,
  • 2:29 - 2:31
    urinating after eating asparagus
  • 2:31 - 2:33
    means smelling a distinct odor.
  • 2:33 - 2:36
    The other 75% of us don't notice.
  • 2:36 - 2:37
    And this isn't the only case
  • 2:37 - 2:39
    of smells differing from nose to nose.
  • 2:39 - 2:40
    For some people,
  • 2:40 - 2:42
    the chemical androstenone smells like vanilla;
  • 2:42 - 2:44
    to others, it smells like sweaty urine,
  • 2:44 - 2:45
    which is unfortunate
  • 2:45 - 2:47
    because androstenone is commonly found
  • 2:47 - 2:49
    in tasty things like pork.
  • 2:49 - 2:51
    So with the sweaty urine smellers in mind,
  • 2:51 - 2:53
    pork producers will castrate male pigs
  • 2:53 - 2:55
    to stop them from making androstenone.
  • 2:55 - 2:57
    The inability to smell a scent
  • 2:57 - 2:58
    is called anosmia
  • 2:58 - 3:00
    and there are about 100 known examples.
  • 3:00 - 3:03
    People with allicin anosmia can't smell garlic.
  • 3:03 - 3:06
    Those with eugenol anosmia can't smell cloves.
  • 3:06 - 3:09
    And some people can't smell anything
  • 3:09 - 3:10
    at all.
  • 3:10 - 3:11
    This kind of full anosmia
  • 3:11 - 3:12
    could have several causes.
  • 3:12 - 3:14
    Some people are born without a sense of smell.
  • 3:14 - 3:16
    Others lose it after an accident
  • 3:16 - 3:18
    or during an illness.
  • 3:18 - 3:20
    If the olfactory epithelium gets swollen or infected,
  • 3:20 - 3:21
    it can hamper your sense of smell,
  • 3:21 - 3:23
    something you might have experienced
  • 3:23 - 3:24
    when you were sick.
  • 3:24 - 3:26
    And not being able to smell anything
  • 3:26 - 3:27
    can mess with your other senses, too.

    Many people who can't smell at all
  • 3:29 - 3:31
    also can't really taste the same way
  • 3:31 - 3:32
    the rest of us do.
  • 3:32 - 3:34
    It turns out that how something tastes
  • 3:34 - 3:36
    is closely related to how it smells.
  • 3:36 - 3:37
    As you chew your food,
  • 3:37 - 3:39
    air is pushed up your nasal passage,
  • 3:39 - 3:41
    carrying with it the smell of your food.
  • 3:41 - 3:43
    Those scents hit your olfactory epithelium
  • 3:43 - 3:44
    and tell your brain a lot
  • 3:44 - 3:45
    about what you're eating.
  • 3:45 - 3:47
    Without the ability to smell,
  • 3:47 - 3:48
    you lose the ability to taste
  • 3:48 - 3:49
    anything more complicated
  • 3:49 - 3:50
    than the five tastes
  • 3:50 - 3:52
    your taste buds can detect:
  • 3:52 - 3:52
    sweet,
  • 3:52 - 3:53
    salty,
  • 3:53 - 3:54
    bitter,
  • 3:54 - 3:54
    sour,
  • 3:54 - 3:55
    and savory.
  • 3:55 - 3:57
    So, the next time you smell exhaust fumes,
  • 3:57 - 3:58
    salty sea air,
  • 3:58 - 3:59
    or roast chicken,
  • 3:59 - 4:01
    you'll know exactly how you've done it

    and, perhaps, be a little more thankful that you can.
