Hey guys, today on working class foodies, I'm going to show you
how to make caramelized, white chocolate, blueberry oatmeal cookies

so to make these cookies, here's what you're going to need
one stick, or half a cup of unsalted butter, softened
one large egg, two thirds of a cup of light brown sugar, packed
half a teaspoon of vanilla extract, two thirds of a cup of all purpose flour
half a teaspoon of baking soda, half a teaspoon of cinnamon,
up to half a teaspoon of salt, and this is optional, but it really pumps of the flavor,
half a teaspoon of vanilla powder
you're also going to need a half cup of dried blueberries,
a heaping half cup of caramelized white chocolate, and one and a half cups of rolled oats
cream together your butter and egg, sugar and vanilla
then you're going to combine your spices and your baking soda into your flour
once you've creamed together your butter, egg, sugar, and vanilla, you're going to add in your flour and spice mixture
let that all mix together for about two minutes.
After you've mixed the flour and spices into the butter and sugar for about two minutes, its time to fold in your mix-ins.
Rolled oats, caramelized white chocolate, and dried blueberries.
The important thing at this stage is not to overmix it, because you don't want to overmix the flour
or the gluten will come out and it will actually become tough instead of soft and chewy, which is what we want.
We're just doing this until all of the ingredients are mixed together, which looks like now.

So now that our dough is all mixed together, we're going to scoop it out
onto our silpat parchment paper or buttered pan, and then we're actually going to
stick the pan in the fridge for about half an hour,
because if your dough is cold when it goes in the oven,
the butter won't melt as quickly and you'll get softer, chewier cookies.
Preheat your oven to 350. Take your cookies out of the fridge and bake them for about 8-10 minutes.
or until the edges are brown, but the centers are still a little bit soft.
